Kueh Wajik

Kueh wajik, a local delicacy mainly found in Asian countries like Singapore and Malaysia.
Its basically glutinous rice and gula melaka(palm sugar)..
This is one of my husband's favourite. To be honest, i never liked eating this local delicacy at all.
But like all enthusiastic wifes, the want to be able to make your husband's favourite and to be able to be outdo his mom. I don't know if i have outdone his mom or anything, cause the husband happily gobbles down this kueh each time he is given them. Though different recipes, different tastes, he has the same old comment "Nice". Men being men.

The husband won't be coming home tonight, so i shall await his review tomorrow. Hopefully he likes it more than the previous time.















Recipe as follows

Ingredients
300 gm glutinous rice, soaked overnight
125ml water
150gm thick coconut milk
75gm thin coconut milk
150gm gula melaka
65gm castor sugar
8 pandan leaves

Method
1. Wash and soak the glutinous rice overnight
2. Spread the rice on a steamer and steam it for 20minutes then fluff it up with a fork.
3. Add in 125ml of water, put in 4 pandan leaves and steam it for another 20mins
4. Leave it to cool.
5. Boil the gula melaka, thin coconut milk, castor sugar, and pandan leaves. Bring to boil and make sure all sugar has been dissolved.
6. Add in the thick coconut milk and mix well and bring to boil.
7. Lower heat, add in steamed glutinous rice and continue stirring until no more liquid is left
8. Pour into a 6 inch tray and smoothen the top.
9. Leave it to thoroughly cool.
10. Cut serve and enjoy! :)

An Appetizer

I'm one of those who is apparently addicted to baking/cooking or basically making something.
Its like, i can't sleep peacefully if i didnt make something new in a day.
The trauma i go through before i sleep, browsing through those foodie websites are a norm these days.

Just a short intro, a new mom of two kiddos aged 3 and 1. Currently working in an IT field.
Baking is a passion, a little solace that i seek. I often dream of that state of the art kitchen, but mine is no where close.

Anyhoos, after months or years of wanting to start a food blog, here, i go.
Hopefully i get to publish those crazy bakes of mine. Whether successful or not is a total different story.
